I’ve got a little food cart crush going on. I’ve been to Sabrosa Barbosa twice in the last week. Sabrosa Barbosa is located in the 10th Avenue pods in downtown Portland. It all started last week when a photo of their nachos appeared in my Facebook feed. I pulled a Liz Lemon and told myself, “I WANT TO GO TO THERE.”
With my heart set on an order of the beautiful nachos, I switched it up last minute and ordered a protein bowl. It was exactly what I needed: Spanish rice, Peruvian beans (Maycoba), pork green chile, onion, tomato, avocado, cilantro and cheese. The green chile was way better than I expected living in the PNW. I used to live in New Mexico and finding good green chile can be a challenge up here. She roasts up a great mix of chili that is just hot enough to get my undivided attention
I went back today determined to make those nachos mine. I don’t know the name of the woman who owns the cart but she is so darn nice. She’s always more than happy to give you a sample of her food. I tried her molé today and it was so damn good. By the way, lots of vegetarian options and it’s largely gluten free.
Any who, back to nachos. Her nachos start with blue corn chips, covered with refried Peruvian beans, cheese, avocado, jalapeños, cilantro, onions, tomato and a creme sauce. You can even add molé chicken or pork green chile if you’re trying to feed a family of four (lots of food!). Trust me, they were even better than they looked in my photo.
